Chicken & Squash Soup


Given that today was 40 degrees cooler than yesterday, our office's "Monday Soup", courtesy of Mo Clark was a warm welcome! Enjoy!

Ingredients
4 Lbs. Chicken
14 Cups Water
10 Cups Butternut Squash, Peeled (Diced)
2 Large Onions (Diced)
6 Carrots (Sliced)
1 Bunch Kale (Trimmed And Chopped)
4 Teaspoons Kosher Or Sea Salt

Directions
Bring Chicken To A Boil In Large Pot. Reduce Heat And Simmer Chicken In For One Hour. Remove From Water, And Cool.
Skim Fat From Stock And Return To Heat.
Add Vegetables And Bring To A Boil, Reduce Heat And Simmer, Covered For 25 Minutes.
Tear Chicken And Add To Pot With Salt.
Heat Through…
